White Chili Chicken

serves 6

2 lb chicken breast -put in crock pot with 3 cups chicken broth.  You want the broth to cover the meat.  Cook on med-high for 3-4 hours.  It will be tender and shred easily.  When this is cooked add the following ingredients....

3 cans white navy beans(drain and rinse)
7 oz can of diced green chilies(add less if this seems to hot)
1 TB chili powder
1 tsp Cumin
16 oz sour cream non fat( try the cow printed label kind.  It binds best)

Saute the garlic and onion in a little olive oil under tender, and then add to crock pot
1 clove  shredded fresh garlic
1/2 cup diced onion

Now mix it all together and add fresh chopped cilantro.  About 1/4 to 1/2 cup chopped.

Serve with a sprinkle of grated cheddar or mozerrella cheese.  Enjoy!!
