Costa Rican Cheese Cake

(Our neighbor in AF was from Costa Rica and made this for us. He made the
name up so that's what we call it.)

1 can evaporated milk
1 can sweetened condensed milk
lemon juice 1/4--3/4 Cups
Marias Crackers/cookies

Mix with beaters both milks for about 3-5 min. Then add about 1/4 to 1/3 cup
of lemon juice. The milk will thicken when you add the juice. Have a small
taste test and if you want it more lemony add more juice. (we like ours pretty
tart!)
Layer on the bottom of a 11x7 dish (or comprable size) the Maria Cookies.
These are found in the mexican section at most grocerie stores. They are in an
orange sleeve. Kinda like the Chips a Hoy sleeve but orange. Or you can use
Vanilla wafers.
Scoop enough lemon mix to cover the cookies. Layer more cookies and then scoop more lemon mix on top. With that size of dish you can usually get
about 3 layers. More layers in a smaller dish. Chill in the fridge for a
while.
This is also yummy with fresh rasperries, blueberries or strawberries on top.
