(Quick, Easy, and Delicious)
Ingredients:
1 tsp. salt
3/4 tsp. paprika
1/2 tsp. ground cumin
1/4 tsp. ground coriander
1/4 tsp. dried thyme
1/8 tsp. cayenne
4 (6 oz.) salmon fillets
1 tsp. canola oil
Lemon wedges
1. Combine the salt, paprika, cumin, coriander, thyme, and cayenne in a small bowl. Rub the spice mixture on the side of the salmon with no skin (I use the frozen Costco fillets and rub mixture on both sides, if you do this, double rub recipe).
2. Heat the oil in a large nonstick skillet over medium-high heat. Add the salmon, skin side up, and cook until fish is just opaque in the center, about 5 minutes on each side. Remove the skin before eating and serve with lemon wedges.
Per serving: (1 salmon fillet) 229 calories, 8 g fat, 1 g sat fat.
