10 oz tortellini with 5 cheeses,(1 Costco pack) boil for 6-10 minutes
3 cans italian stewed tomatoes, BLENDED
1 can tomato sauce
1-2 cans black beans, rinsed and drained
1 can navy beans, rinsed and drained
1 can kidney beans, rinsed and drained
2 cups corn (canned or frozen)
1 Tablespoon italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
While the tortellini is boiling in pot add the blended tomatoes and all the beans. Next add the corn and seasonings. Drain and rinse tortellini and add to crock pot/pot. Leave for 1 hour. May serve with corn bread and spinach salad.
I just made this and I will make a couple of suggestions.
1. Make the soup and let cook for 30 minutes. Then, in the second half hour of cooking, in a separate pot, boil water and cook tortellini for 6- 8 minutes. The soup should only have about 10-15 more minutes when tortellini is done. Rinse cooked tortellini and put into soup for these last few minutes. If the tortellini is in the whole hour, then tortellini gets very big and absorbs all the moisture from soup. To serve, it is good to sprinkle a little cheddar cheese on top.
2. I only put 1 can black beans and that seemed like plenty.
