1 3/4 cups sugar
3 eggs
1 cup oil1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
2 1/2 cups flour
3 tsp. vanilla
1/2 cup milk
1/3 cup cocoa powder (Hersey's is best)
2 cups zucchini (grated)
Mix all ingredients together. The resulting batter will be quite runny. Pour batter into a well greased jelly roll pan or deep cookie sheet. Bake 20-25 minutes at 350 degress. Let cool before frosting.
FROSTING
3/4 stick margarine
5 Tablespoons milk
4 cups powdered sugar (or more)
2 drops of almond extract
Bring first three ingredients to a boil. Add enough powdered sugar until smooth for spreading consistency (about 4 cups, maybe more). You can use vanilla instead of almond extract, if desired. Spread on frosting while it is hot. (If it get too cool, it is hard to spread.)
