Super Easy Stuffed Green Peppers

Ingredients:
Green Peppers (1/2 pepper equals one serving)
Any boxed Spanish Rice (ex. Rice-a-Roni)
1 (15 oz.) can diced tomatoes (this is called for in the directions of the spanish rice)
1 (15 oz.) can corn, drained
1 (15 oz.) can black beans, drained and rinsed
Grated cheddar cheese

Directions:
Prepare Spanish Rice according to directions (this will include your diced tomatoes). While rice is simmering, pour corn and black beans into rice and allow them to simmer together. While rice simmers, cut green peppers in half and clean out seeds. Place green peppers in a greased dish face up (forming a small cup). When rice is finished, scoop rice into pepper halves (I also scoop extra rice and pour around the peppers. Don’t feel like you have to use all of the rice. Extra rice makes for great leftovers). Cover and bake at 375 degrees for 1 hour or until peppers are soft. With 5 minutes left in baking time, put grated cheese over peppers and rice, keep covered so rice does not dry out.
