2 Tablespoons olive oil
3 large baking potatoes, peeled & diced
(you could also use store bought hash browns)
? cup chopped red bell pepper (optional)
2 cloves garlic, chopped
? cup chopped onion
salt & pepper to taste
10 slices bacon
1 tsp. milk
1 cup shredded cheddar cheese
Heat oil in a large skillet over medium heat. Add potatoes, pepper, garlic, onion, and cook, stirring occasionally until potatoes are tender. Cover the pan with a lid for faster cooking. Preheat the oven to 350 degrees. Spray 9x13 pan with cooking spray. Set aside.
Fry bacon in a skillet, until crisp. Drain & crumble, & set aside. Spread the potato mixture evenly in the pan and cover with cheese and bacon. Whisk eggs, milk, salt & pepper together with a fork. Pour evenly over the food in the pan.
Bake for 20 minutes, just until the egg is set.
