CRUST
20 chocolate wafer cookies--or you can use graham crackers, both are good
2 TB sugar
2 TB butter melted- or you can use spray butter to help stick it all together
FILLING
2 8 oz-packages of reduced fat cream cheese-softened
1 cup sugar
1.5 cups canned pumpkin
2 eggs
3 TB flour
1 tsp pumpkin pie spice
1/2 tsp salt
4 ounces semi sweet chocolate chips
In a food processor blend cookies, sugar and butter. Press into a 9 x9 pan and bake for 12 minutes or until slightly firm.
Place cream cheese into food processor, blend until creamy. Add sugar, pumpkin, egg, flour, pumpkin pie spice, and salt. Blend until smooth.
Melt chocolate chips in microwave. Then scoop out 3/4 of pumpkin mixture to 9 x9 pan. Take the rest of pumpkin mixture and add melted chocolate chips. Then add dollops of the chocolate mixture to the cheesecake. Take a knife and swirl this on the top of the pumpkin cheesecake. You want it to marble on the top.
Bake cheesecake on 350 for 40-50 minutes. When done the cheesecake will slightly jiggle. Cool in pan for a couple hours. This will make it easier to cut. Slice into 2 x 2 squares and enjoy!!
