4 Tablespoons softened butter
1/4 cup brown sugar
1/2 cup white sugar
1 egg
1 cup buttermilk
1 3/4 cup flor
4 1/2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1 large eating apple, peeled and cut into 1/2 inch chunks
1/3 cup brown sugar
Cream butter and sugars until fluffy. Mix in egg. Quickly fold in buttermilk; do not overmix or batter will curdle. In a separate bowl, mix flour, cinnamon, baking soda, and salt. Add gradually to sugar/egg mixture, making sure there are no lumps, but mixing no more than necessary. Fold in apple chunks. Fill each cavity in the muffin tin nearly to the top. Sprinkle 1/3 cup brown sugar on top. Bake 15 minutes at 400 degrees. Makes 12 muffins.
