Chilled Avocado Soup

1 firm, ripe avocado
2 C. chilled water
1/2 C. sour cream
1/2 C. fresh cilantro sprigs, plus a few extra
1- 1/2 TBSP. fresh lime juice
1/2 tsp. minced garlic

Halve avocado, remove pit and scoop out flesh. Add avocado, water, sour cream, cilantro, lime juice and garlic to blender and blend until smooth. Transfer to a bowl. Salt and pepper to taste. Chill uncovered for at least an hour. Serves 4.

Top with a few sprigs of cilantro and serve with tortilla chips and diced tomatoes. Another accompaniment to enhance the flavor of this soup is a steamed crab leg and some diced watermelon.
