Serves 4
8 chicken drumsticks
Mustard Marinade
2 Tablespoons clear honey
2 teaspoons English mustard
2 teaspoons coarse-grain mustard
2 teaspoons Worcestershire sauce
Juice of 1 orange
2 cloves garlic, crushed
1/2 onion very finely chopped
makes several deep slashes through the skin of each drumstick and place chicken in a shallow glass dish. Mix the marinade ingredients together and pour over the drumstick. Turn the drumstick so they are evenly coated in marinade. Cover and refrigerate for 2-3 hours or overnight.
Remove the drumstick from the marinade, reserving the marinade for basting, and cook the chicken on a prepared grill for about 20 minutes, turning occasionally and basting during cooking. To test that the chicken is cooked, pierce the flesh with a skewer. If the juices run clear, the chicken is ready to serve.
