6 cups warm water
2/3 cup canola oil
2/3 cup honey
14 cups whole wheat flour
2 Tablespoons wheat gluten
2 Tablespoons dough enhancer
2 Tablespoons self-rising yeast
2 Tablespoons salt
In the Bosch mixing bowl (can be done by hand but it wont be as fluffy) add warm water (110-120 degrees), oil and honey. Don't mix. Then add 8 cups of milled wheat flour-don't mix. On top of the flour add bread enhancer, gluten and yeast. Mix on speed 1 until smooth. Let stand for 10 minutes. Next on speed 1 add the salt and the rest of the flour. If dough is sticky, add 1/2 cup flour. set timer for 10 minutes on speed 2. With pam on your hands, form dough into 6 loaves. Spray pans with pam and place dough in each. Let rise for 30 minutes. Place loaves into a cool oven, then turn on to bake at 350 degrees. Bake for approximately 30 minutes.
