This recipe comes from a yummy restaurant in Ogden called The Greenery. Note 1: The recipe suggests letting mix sit overnight
Note 2: The recipe makes a ton of muffins. I usually cut the recipe in half. If you do make the entire recipe, the muffin mix will last one week, covered and refrigerated. Hence: warm, fresh muffins everyday for a week!!!
Ingredients:
2 cups water, boiling
5 teaspoons baking soda
1 cup shortening
2 cups sugar
4 eggs
1 quart buttermilk
5 cups flour
1 teaspoon salt
4 cups All-Bran cereal
2 cups bran flakes
1 cup walnuts, chopped
1 cup raisins (optional)
Add baking soda to boiling water and set aside. Whip shortening and sugar until light and fluffy. Add the eggs slowly. Mix well. Add buttermilk, flour, salt and mix well. Add soda water very slowly. Gently fold cereals and nuts into the mix. Let muffin mix sit in the refrigerator OVERNIGHT before baking. (Muffin mix will last one week, covered and refrigerated) Stir batter. Spoon 1/8 cup into each greased muffin tin. Bake at 350 degrees for 20-30 minutes. Cool 5 minutes.
Servings: 3 dozen
