Crepes

4 eggs
1 cup flour
1/2 cup milk
1/2 cup water
1/2 tsp. salt
2 Tbsp. melted margarine
2 tsp. sugar
1 tsp. vanilla
Mix together in blender. Cook in crepe pan or small frying pan. Only pour enough batter in to lightly coat the bottom of frying pan (put a dab of butter in bottom of pan each time you pour crepe mixture in pan). When sides of crepe begin to curl slightly, flip the crepe over using a rubber scraper. It does not take long to cook crepe, maybe 20-25 seconds on each side.

**If you are serving these for breakfast, you can serve them plain with just syrup, or you can fill them with your favorite fruit and top with a coordinating jam or berry syrup, and top with powdered sugar or whipped cream, or both!

**If you would like to turn this into a yummy dessert, then follow the rest of these instructions:
Apple Filling:
1 lb. apples, diced into bite-size pieces
1/4 cup melted butter
1/4 cup sugar
1-2 tsp. cinnamon
Cook apples and above ingredients in large frying pan until tender.

Sauce:
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup margarine
1/2 cup canned milk
Mix ingredients and heat in saucepan over medium heat until it resembles a caramel sauce.
Fill each crepe with some apple filling and roll up. Top with caramel sauce and cool whip. Enjoy!
