Saute together
1 lb cooked chicken breast
1/2 cup onion--diced
2 cloves garlic--chopped
Add to pot
4 cans white beans---rinse well and drain
4 tsp chicken base--at Costco or can use chicken boullion
1 can diced green chilies
1 TB chili powder
2 tsp cumin
16 oz fat free sour cream- i like the cow labeled one
1-2 cup water add more if too thick
4 TB fresh cilantro chopped
Toppings
1/2 cup grated part skim mozzarella cheese
Directions-
Precook the chicken and cut into small bite size pieces. To save time I crock pot the chicken in 2TB chicken bouillon and 3-4 cups water for about 4-6 hours. Then I pull out the chicken and shred it and then add the sauteed garlic and onions. Next add all the ingredients to the crock pot and let cook for 1 hour. This is so simply and fast. If you don't want to use the crock pot, just precook the chicken, garlic, and onions and then add to a large pot. Add the rest of ingredients and let cook for about 1 hour. Serve with a sprinkle of mozzarella cheese and baked tostidos.
