Wheat Berry Salad By: Rachele Beck

1 cup wheat-hard white or red
4 cups water

Bring 1 cup wheat to a boil in the 4 cups water and then let simmer on low for about 30 minutes. You want to wheat to be chewy and soft.

While this is simmering- cut up(dice into bite size pieces) the following

1/2 cup green onions
1/4 cup purple onions
1/4 cup craisens
1/4 cup raw pecans
1 whole apple(fuji, pink lady, or gala are best)
1/2 cup celery

Dressing
1 TB olive oil
4 TB rice vinegar
2 TB Agave nectar(this is at good earth-it is a plant based sweetener and is very good)
shake in salt to taste
shake in pepper to taste
4 TB pineapple or apple juice

Once the wheat is cooked, drain off any extra water and place in serving bowl. Add in all chopped veggies, pecans, and craisens and then pour on the dressing. Mix altogether and let sit in refrigerator for 1 hour and serve. This is so yummy and stays in the refrigerator for 1 week.
