This is a quick recipe, it takes less than 30 minutes from start to finish. It also serves about 8-10.
package 10 inch flour tortillas
4 Tbsp. vegetable oil
1 onion chopped
1 red bell pepper chopped
2 cloves minced garlic
4 (15 ounce) can of black beans, rinsed and drained
1 pretty small jalapeno pepper
1 - 6 oz. cream cheese - this is a little less than a full block (I use and prefer the fat free cream cheese but if you want to use regular, knock yourself out!)
1 tsp. salt
4 Tbsp. chopped fresh cilantro
Optional: Salsa and sour cream
Wrap tortillas in foil and place in oven heated to 350 degrees F. Bake for 15 minutes or until heated through.
Heat oil in a skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet. Coook for 2 minutes stirring occasionally. Pour beans into skillet. Cook 3 minutes stirring.
Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
Spoon mixture evenly down center of warmed tortillas top with cheese. Roll tortillas up and serve immediately. You can either eat this as is or top with a little bit of salsa and sour cream according to what your tastes are.
